Ingredients for 3 servings
6 medium size fish fillets (Perch, Cod, Sole, and similar)
2 medium size red onions
4 medium size yellow potatoes
1 broccoli head
2 medium size beets
3 medium size carrots
1 egg
5 Table spoons extra virgin olive oil
6 Table spoons cooking oil (optional)
1 Cup bread crump
2 Table spoons fresh lime juice
3 Table spoons general purpose seasoning (see directions below)
1 Cup all-purpose flour
Directions
1 – Peel potatoes, carrots, beets, and onions and chop them evenly on a cutting board to 2-3 cm size. Divide broccoli to florets. Souk potatoes in cold water to release excess starch.

2 – In a mixing bowl add lime juice, 2 table spoons of olive oil, and salt mix well. Marinate fish filets in the mixture and set aside.
3 – Drain and dry potatoes, add all vegetables to a mixing bowl, add 2 table spoon of seasoning, 3 table spoons of olive oil, salt, and mix well. Let the seasoning flavours to diffuse.
4 – Spread vegetables evenly on cooking trays and cook in a 360 degrees Fahrenheit (180 degrees Centigrade) preheated oven for 30 minutes or until the vegetables are soft.

5 – Now prepare 3 plates for fish coating. In one plate flour mixed with 1 table spoon of seasoning, second plate the bitten egg, and the third one with the bread crump.

6 – Drain fish fillets from marinate, dip one by one in flour mixed with 1 table spoon seasoning, shake to remove excess, then into bitten egg, and finally into bread crump to be coated evenly all around.

7 – Heat oil in a frying pan. Cook the coated fish fillets for 5 minutes, flip to the other side, and continue to cook for another 5 minutes or until gold and brown. Remove from pan and place them on a kitchen towel to absorb excess oil.

8 – Or, for a healthier and quicker recipe, place coated fish fillets on a baking tray and cook for 15 to 20 minute in oven with other vegetables until cooked through and brown.

General Purpose Seasoning
Add 1, 1/5 cups turmeric, 1/2 cup cinnamon, 1/2 cup smoked paprika, and 2 table spoons black pepper (optional) in a mixing bowl. Mix well and keep in an air-tight container. It can be used as a general purpose seasoning.
