Nothing compares with this delicious butter flavoured almond cookie . Best for Nowruz celebrations or just for any family gathering


Ingredients for 3-dozen Cookies

  • 1 Cup all-purpose flour
  • 200 Grams butter cut in small pieces and at room temperature
  • ¼ Cup fine ground almond
  • ½ Cup sugar
  • 1 Small egg at room temperature
  • ½ Teaspoon ground cardamom
  • ¼ Teaspoon salt

Directions

1 – Preheat the oven to 350 °F (180 °C).

2 – In a medium size bowl beat sugar and butter until creamy and fluffy.

3 – Add egg, cardamom, and continue to mix.

4 – Strain the flour mixed with salt to the mixture ½ cup at a time.

5 – Using a cookie press with your favourite disk form cookie shapes and place them down 2-3 cm apart on cooking trays. Be careful not to grease the cookie trays if you use the cookie press.

6 – Or, grease two cookie trays, make small mounds of the mixture using 2 teaspoons, and place them 4-5 cm apart on cookie trays. You may use the back of fork soaked in beaten egg to flatten slightly before cooking.

7 – Bake in oven for 10-12 minutes until golden brown.

8 – When out of oven, cookies are very delicate and prone to breakage. Wait few minutes and let the cookies to solidify.

9 – Transfer baked cookies to a wire rack to cool and crisped before serving.

10 – Keep in an air tight container for future serving. Best for a coffee break or a tea-time.
