Another version of “coo-coo” a traditional Persian meal. It combines flavours of onion, broccoli, and eggs to create an impressive family meal or an amazing appetizer. Easy to make for less than 30 minutes.


Ingredients to make two meals

2 Large eggs

2 Cups chopped broccoli (one big broccoli crown)

3 Tablespoons extra virgin olive oil

1/2 Teaspoons salt

20 Grams butter

2 Table spoons shredded parmesan (option)

1 Teaspoons general purpose seasoning (See Crispy Fish and Vegetables)

Black or hot pepper as needed


Directions

Wash broccoli crown, remove big stems, and chop with a small knife to small pieces.

Chopped Broccoli

In a medium size bowl scramble eggs, add ptarmigan cheese (optional), and mix well with the chopped broccoli and onions. Add salt and seasoning and mix well.

Set the heat to medium, add 2 table spoons of olive oil and butter in a frying pan, add the mixture, spread evenly, reduce the heat to low, cover, and cook for 5 minutes.

Divide the omelet into manageable pieces and turn over omelet pieces, add one tablespoon olive oil, and cook uncovered for another 5 minutes on medium heat. Keep an eye on it until both sides are brown and crispy.

Enjoy it with home-made bread Barbary or rice.
